Triple Berry Cheesecake with White Chocolate Sauce
Ingredients:
200g of leftover assorted biscuits
80g melted butter
2 whole eggs Juice of 1 lemon
100g caster sugar
400g leftover assorted berries
150g diced butter at room temperature
250g full fat cream cheese
50g icing sugar 100ml pouring cream
100g caster sugar
150g white chocolate
Method:
Crush the biscuits up into small pieces or whizz up in a food processor. Mix in the melted butter and compress down in your desired cheesecake mold or tin and set them in the fridge.
Meanwhile, whisk the eggs, half of the berries with the lemon juice and half the sugar in a mixing bowl over a pan of simmering water. Cut up your butter into small chunks and bring to room temperature.
Keep whisking the eggs until they start to cook making sure that you move the bowl around and you do not scramble them. The egg mixture is cooked when you can write a letter in them when drizzling with the whisk.
Transfer the cooked eggs into a cold bowl and allow to cool for 5 minutes, stirring as they do. Fold in the chunks of butter piece by piece until the mixture is smooth and creamy Whisk the cream cheese and icing sugar together and then gently fold the berry curd into the bowl.
Pipe or spread the filling into your cheesecake molds and set them in the fridge.

Meanwhile, boil the remaining sugar in a splash of water and add the remaining berries and cook for 3-5 minutes until they become one, allow to cool. Pour the compote over the cheesecake and allow to set in the fridge. To make the white chocolate sauce, simply warm the cream through with the sugar and then add the white chocolate and stir until smooth. Pool the warm white chocolate sauce on the plate, add the cheesecake on top and enjoy!
