Leftover Sausage Casserole
Ingredients :
1 tbsp of oil (we recommend rapeseed oil )
4 good quality pork sausages
2 rashers of smoked bacon cut into thin strips
1 medium red onion thinly sliced
1 clove of crushed garlic
1/2 tsp of smoked paprika
1 tsp tomato puree
30ml red wine
100g of chopped tomatoes
50ml of beef stock
1/2 tsp Worcestershire sauce
1 tsp dark brown sugar
1/2 tsp dried mixed herbs
1 tbsp fresh parsley salt and freshly ground pepper
Method :
Heat your oil in a nonstick pan over a medium heat and fry the sausages gently until golden, turning occasionally (around 5 minutes). Add the bacon pieces and onion to the pan and fry until they begin to brown.
Add the garlic, paprika and tomato puree and cook for a further 2 - 3 minutes. Carefully add your wine and allow to cook for a further minute. Stir in the tomatoes, stock, Worcestershire sauce, brown sugar, and herbs and allow to simmer.
Loosely cover the pan and leave it to gently simmer for about 20 minutes or until the sauce thickens, ensuring that you are still stirring from time to time.
Season to taste and once you are happy to finish by stirring in the fresh parsley and enjoy with rice, potatoes or crusty bread.
