Gita's "enraged" pasta | Calabria
This Calabrian dish is nearly as famous as Uncle Mac in my opinion. Every Indian who has a penchant for Italian will most likely start his or her journey with this pasta. It has never been on a Diva menu, yet I think we make at least 10 portions of it every night on request. I think I do a mean arrabiata, but someone who does it better than me is Gita –if you don’t believe me ask the Bhalla clan.while they wait for their meal. Cook this pasta recipe and enjoy your lunch.
2 onions, chopped
50 ml olive oil
3 cloves garlic, chopped
75 g Parmesan, grated
2 small fresh red chilies,
deseeded and finely chopped
1 kg tomatoes, blanched,
skinned and seeded
A pinch of sugar
In a pan heat the olive oil and cook the onion, garlic, and chilies. Cook till the onions are brown. Add the tomatoes. Season with salt and sugar and let the mixture cook for about 15 minutes on low heat.

Meanwhile cook the pasta in salted water till al dente, reserving some of the pasta cooking water.

Mix the pasta with the sauce and half the Parmesan, and a bit of pasta water to give it a smooth consistency. Serve with the rest of the Parmesan cheese.
